Same day pizza dough - perfect for busy weeknights when you need pizza fast.

๐ Ingredients
- 1000 grams of Flour (prefer 50% 00 and 50% All Purpose)
- 20 grams of Diastatic Malt Powder (makes the crust crispy)
- 10 grams of Sugar
- 20 grams of Salt
- 4 grams of Instant Dry Yeast
- 20 grams of Olive oil (will go on top of dough once done)
- 640 grams of water

Mix by hand or blender...

All dry ingredients get mixed together (Flour, Yeast, Malt powder, Sugar, salt)

Add water and mix (could mix by hand)

Move dough to counter and continued to fold by hand for 2-3 min

Place in a air-tight container or in a covered bowl and let sit out of fridge for 3 hours, then place in fridge for 1 hour following.

Remove dough from fridge and let sit another 30 min.

Dough is ready to be portioned (250 grams each) if required or spread and used.

Preheat oven to 450 and pizza should be good in 15 min.
